Well first off let me put in a plug for my Sifu Chung Kwok Chow :D
He has a series of videos out which cover all three emptyhand forms, Chi Sau, Free Sparring, Combat Techniques and a two tape series on the dummy. I have found his tapes to be among the most detailed available. Of course as his student I am a bit biased. :p
