If you are in North America, a good price for airfare to Beijing is $600 US or less. If you want to see traditional kung fu, go to Beijing (Peking), Shandong (Shantung), and Xianggang (Hong Kong), etc. If you want performance wushu, go to Beijing or Shaolin.

For traditional Northern styles you might actually be better going to Taiwan.
Try posting on noticeboards for Hong Kong, Beijing and Taipei, and see what you can find.

There are 2 Shaolin Temples in the South - one in Phu Tien in Fujian, the other in Chuan Chou (not sure of the province). Visited both and was quite impressed.
