what chinese martial art mostly influence, ninjutsu.

and if I where to take Bujikan Ninpo what would I learn at first, espionage or taijutsu

Taijutsu. If you are interested in espionage, go somewhere else... Some dojos may add stuff like tracking, silent movement etc but most likely its from outside sources, ie NOT ninjutsu.

some say the so called 'Vagabond' style which has it's roots in southern Hakka based arts.

but, that's one of the reasons ninjas suck so bad...they are really just doing kung fu. badly.
