Dictionary definitions, logic, or operational meanings?
All 3? It would take a book! And many would go to sleep!
There would be operational differences between sub styles.

just to share different stuffs.

Yik Kam lineage has preserve a two men set called Chi Sau Long. Long in Fujianese is "play, playfull". so Chi Sau Long means the play of Chi Sau. This set is an example of Chi Sau for the Yik Kam line. the content covers from the 4 cycles, tan, fok.. front/ back./side/up down/. walk/ rotate....to ground kick to ....

also there is another two men combination practice named Chong Kiu sau.
Chong means strengtherning. This set is about developing and strengtherning the bridge using varius technics include Lap and tan/ chao Da.... with YJKYM. also this Chong Kiu sau was sometimes called Chi Lin wan kiu. or sticking continous bridge.

I thought the goal of chi sao was to move beyond playing with the hands and to develop sensitivity to the point where you dominate his center. Similar to Taijiquan tui shou? Or maybe thats just me wishing wing chun was more like taiji.
