Actually- Ip Ching in his book pointed out that the family preferred the Ip spelling in English!! Could be closer to the preferred sound.

I heard that Yip Man never taught on the secret Wing Chun techniques of breathing fire or transforming into a toaster. So, after he throws hardened bread at himself he would 'win' and then have a bbq afterwards.
