Right, when I was in China (Wenzhou, Zhejiang) we used to go this restaurant round the corner (bear with me) and order "shao mien", prawn/shrimp noodles.

When they came they were those long soft (wheat?) noodles, with prawns/shrimps, bits of lovely green veg (pak choi we call it in the UK) and other bits and bobs, in a savoury brown soup. You also could if you wanted put some chilli stuff in it.

Right, now, this must be so simple to make, if only you can make the soup. But what's in it? Some sort of stock, with salt, little bit of soy maybe? I don't have a clue to be honest.

Can anyone help?
