I speak for neither lineage, but I can offer up some information.
They both have an extremely similar Kiuh Sau platform. They both have a "Heaven/Human/Earth" strategy/orientation. They both rely heavily on Chan philosophies in their tactical engine.
In application, I personally feel that Chi Sim appears (physically) to bear a stronger resemblance to "traditional" Shaolin, where Hung Fa Yi appears (physically) to bear a stronger resemblance to the upright orientation we know and expect from Wing Chun.
As far as I know, the two are only taught side by side in VTM Schools. That is a fairly recent development.
