Its cantonese, Chum is to look, find or seek, Kui is a bridge.

Chum Kiu can mean both "seeking bridge" or "sinking bridge" (establishment of your link to an opponent and destruction of their link to you).

however sinking the bridge is the name of the technique

They're actually both the name of the form. The sounds are similar and the literacy rate was not high and so different teachers (sometimes even in the same lineage) used either one or sometimes both. In Hong Kong, Seeking Bridge is more common, in Guangdong, Sinking Bridge. Personally, I like them both-flip sides of the same coin.
