Yah, I love biltong. Eat quite a lot of it during the week. I've actually looked into getting an Excalibur dehydrator to make my own. It'd probably work out cheaper in not too much time.

Turkey
Deer
Elk
Bear (I've only seen this one place)


etc.


You can also get rocky mountain oysters, but thats another story.

I make venison jerky all the time. It never lasts long tho. :rolleyes:

Toby you don't need a dehydrator just the oven. Set it on 200 to 225 and crack the door a bit to let the moisture out. Place the meat on cookie sheets or "cooling racks" and let it go for several hours. Done.

What I like is the fact that you can spice it any way you like it. Just have to keep it hidden from all my friends or it is gone in a day. :D
