I heard from Steven Rain (who knows Wing Chun loads) about the Bok Sau technique.

"Bok Sau originates from Jeet Kune Do. Bruce Li inventid this technique from the woden dummy fighter technique in 1974"

I personally believe all of this as Steven studied History at Staffordshire polytechniques (joint honours David Beckham studies).

It involves clucking like a chicken while pecking at your opponent with your hand.
Your hand resembles the head of a chicken with the fingers all touching the thumb, hence the combination of said, being called the Bok Sau.
