what other styles use the wooden man as a tool ?

Choy Lee Fut, of course. Also Tai Chi Praying Mantis (inspired by Wing Chun). Tibetan White Crane folks often use a stationary jong with hardwood pegs for the limbs that can be moved to various positions.
