Shaolin dude opens with a left hook kick.. Jet Kune do dude blocks and trhows a left punch at his belly....

If they are both "Masters" then they will find a restaurant and have some tea.

In which case they both win.
Unless only one of them winds up paying for the tea in which case he loses (a little money) but depending on the content of their conversation over tea, the one who pays may be the one who felt the garnered the most from the conversation which means the one who isn't paying has lost because he has given up more information.

It's a tough call really.

Oh yes the tea must be high mountain tea grown only in small areas high in the mountains of taiwan.

mmmmmmmmm Gao Tsan Cha...

Smart martial artist they must have been otherwise they wouldn't have lived to become masters in their styles. Chances are they'll send in their students (oh the ones who don't pay on time) to fight it out. At least they can have their tea AND enjoy the show!

No real life Shaolin "master" would open with a left hook kick.

But in the movies,

1) The Wing Chun Shaolin master could use a bong sao or other low block, step in and go for a trap, where the JKD master might bounce back or match the trap

2) The Northern Shaolin master could spin away and throw a series of crescent kicks, which would cause the JKD master either to jump in for a grappling takedown or go into a standing guard position to fight from afar

3) The Hung Ga Shaolin master could attempt to claw the arm coming in with a tiger strike, but the JKD master would sense this and either retract his fist quickly or try to strike the offending tiger palm.

4) The Henan trained Shaolin monk of yore could simply absorb the punch while striking back with a more powerful attack, and the JKD master would either press his momentum or step out of the firing line.

So go the movies?

Well this post was only meant to be fun to read so dont't take it to seriously. I have no clue in HELL how a Shaolin master would open an attack.. But movies are a fun.
