It could help develop a solid ground even while moving. Unlike 2 wheel cycling, peddling a unicycle requires both front and back muscles of the upper legs to be used at all times, never really relaxed, to keep balance while also peddling forward or backward. In turns, I'm pretty sure the waist directs followed by a spiral torque through the spine, to shoulders, to elbows, and then to hands. Of course the legs and feet are a unit with the waist.

actually you are peddling with both legs in turn
this may transfer into kicks in chain
it is called the wheel kicks
there is the wheel of the wind and fire
there are also weapons made of wheel like shapes and mechanism
one may develop both thigh and lower leg strength also from riding the bike
and of course juggling your both arms at the same time

there is this kid that lives in my town, he rides a unicycle everwhere. its got a bigger wheel and a bit wider, but he bombs around on that thing, he actually goes really fast. its cool to see him go up hills or pass cars.

I think you have a world champion unicycler up there in the Portland region.
The larger wheeled unicycle is obviously faster because of geometry and mechanics. But, it requires much more leg strength and balance, especially at slow speeds.
It is interesting to try riding without using arms for balance- only using the lateral movement of hips. This might be good exercise for Snake Kung Fu or Bagua.
Come to think of it, Bagua practitioners would probably like the one wheel ride.
