The "single leg" used in SC is quite different from the one used in wrestling. Because the jacket, you can pull. When your opponent resists, you can borrow his resistence, change your pull into push, and take him down. If the timng is perfect, it's almost an effortless throw.

Since you only use one hand to get your opponent's leg, you can use the other hand to control his upper body. This way, your opponent will have less chance to hit your head. If you can replace jacket pull with "arm drag", it can also applied into no-jacket environment quite well.

It seems to me that this kind of single leg will be safer to be used in UFC. What's your opinion on this?

you see the knee pick all the time in wrestlin not so much in MMA becuase its hard to set up, you need single coller tie or an underhook and you need to move them around to load the leg and get them off balance before you pick or tap, you dont see this is MMA as it opens you up to strikes a bit and its a different enviroment
Also it wont work off an arm drag unless your opponent has no grappling skills

examples of a knee pick or knee tap, see how you have to have a superior grip and really move him around, and even if it worked off an arm drag you dont see that in MMA unless its against the cage because setting up the arm drag opens you up to strikes to the head and you dont have the luxury of being about to set things up and people dont want to tie up and hit you hard with their free hands

also note its more a knee tap/block than a lift as its hard to lift someones leg one handed if they are fighting back

Back then all my guys were good in "single leg". Here is another clip that she used "single leg (Kou)" to take her opponent down 3 times in 47 seconds.
