When you go to NY Chinatown, if you are Chinese and if you don't speak Cantonese, the waiter won't serve you food (I had personal experience on this). If the Cantonese dialog is treated as the only recognized Chinese dialog, WC may be treated as the only CMA. This is why I have always used the word Shou instead of the word Sao just to indicate that there is Mandarin Chinese that also exist.
