there is a nice knee to a spawl technique that Pele did to Matsui in PFC in Japan. Basically when the guy comes in for the takedown you throw a knee (sometimes a flying knee) then sprawl your legs back and land on top of him.
I think I would feel most comfortable sprawling only because it is the safest technique in that it is a high percentage move.
If I can see the takedown in time, I try to block him out with my hips by folding. If I don't catch iti n time, sprawl or jump to guard.
I practice Kata Gatamei and Kabishimei against those take downs a couple of times a week at least. One's a shoulder immobilization and the other's a choke. Would my technique work against a better trained and stronger fighter ala pro-UFC? Probably not, but it would succeed against someone I'm likely to fight.
Level control and forearm shield, or turn into them and sprawl (THEN elbow into the back of the head). There isn't really a defence against a good double leg once they're in position, so you have to dictate the position.

If I didn't spot the shoot in enough time to avoid, I would sprawl probably followed by a hammer fist to the back of the head, probably followed by a knee to the face. Repeat... Hammer Knee...Hammer Knee.
