Right around 2:50 or so you go on to say that "the Grab" could be used in Chi Sao. Oh boy...better not open up that can of worms. ;) Although I agree with you on that.
So basically, your method is to give him some pressure or resistance and when you feel him resisting VS your pressure...you grab and strike?
If that's at the heart of what you're saying I won't disagree that can work...but it's pretty common. I even learned that in Judo as a kid only It was moreso for throwing.
I gotta say though...I don't really feel that was a good representation of an iron bridge.
