Ditang Quan is what you are referring to. You will see many of the so-called Shaolin monks do this routine but it is not peculiar to Shaolin. In fact, there are an number of people who do or teach the same routine throughout the martial arts colleges in China.
Be prepared to get bruised while you learn how to fall correctly though....
