Yet another question on WC!
But this one is easy. Why do they call Wing Chun practioners, Wing Chun players?

In Chinese, like in English, there are several ways to say something, some being more colorful than others. So, if you want to say you "do" Wing Chun Kuen (in Chinese), you can say "Ngaw Sik Wan WCK" (I know play WCK). Or you can say "Ngaw Da WCK" (I hit WCK). That's one possibility.
In a Western sense, its also not an unusual term. You even hear people talking about "playing" BJJ and discussing the relative pros and cons of peoples' "games".
Maybe it's juts putting the smiley face on the violence, sort of an ironic absurdity.

Because most wing chun people don't take they're training seriously.
