I don't think anyone has a definitive answer for that - the record keeping just isn't good enough. My guess is late 20s and dropping. MMA used to be primarily the domain of guys who had stopped competing in some other sport (most notably wrestling); we're now seeing the emergence of late teens, early 20s fighters who literally grew up with the idea of making MMA a career.

The average age of title holders in Pride is 31.8.
The average age of UFC hall of famers is 44.
The average age of an MMA fighter is roughly 28.8.
