What is sabaki?

I understand that it is some sort of full-contact karate tournament. However, I think I read somewhere that it is also a karate technique of simultaneously blocking and attacking at the same time. Could somebody please give me some more information on what sabaki is? Also, are all karate styles represented in this tournament? Thanks in advance.
