I heard the song used in Knockabout in a train from Henan to Shanghai. My parents didn't know the song (they grew up in China).
I don't know what those songs are yet. I suspect the one at the beginning of Knockabout might be from a Hong Kong source, but I'm not sure. And the one in The Victim sounds to me like it could be by Li Taixiang (Li Tai-Hsiang). The theme in The Victim has a similar sound to it as some of Li's 1970s-era music. But I could be mistaken on that. If I find either one of them, I'll post it, unless you or somebody else finds it first.

I found a few songs, but not the ones I was looking for...

    https://www.youtube.com/watch?v=aNfjxNm9hVo

This is one of Li Tai Hsiang's early albums. It's over 30 minutes long and it contains 3 songs each over 10 minutes long. The third song contains variations on the track "马车夫之恋" (which was played at the beginning of "Magnificent Butcher"), many of which were played throughout "Magnificent Butcher".

I happened to find this album while looking through Li Tai Hsiang's songs to find the two I wanted. I haven't found them and I suspect they might not have been his. It does sound similar to his style, but none of his early albums (pre-1980) have the two songs.

    Good find! Thanks for contributing!

Actually, the parts of the songs that start at around 2:49 and 10:37 of that album are heard in:
    Buddhist Fist
    And others...

I will count these two as entry #319.

    Do TV shows count?

I was checking out Three Kingdoms RPG, a 2012 Hong Kong TVB show about a videogame slacker who falls into the Three Kingdoms videogame, and noticed that some of the theme music is a variation of the soundtrack of the old '60s show, The Saint, with Roger Moore.

Hi. I've thought about that intro music before, and I've also heard it in other Taiwanese KF films as well. I don't know the source of it. I suspect its source may be Taiwanese (or Japanese?), probably from a 1960s film or TV series. Or if not, the only other distant possibility I can think of would be an Italian peplum movie, perhaps.

*If I ever learn its source (AND a link to it), I'll post it up.
