Mastering Yang Style Taijiquan by Fu Zhongwen
Good, detailed information on Yang style and its 103-form in particular. Has sections on push hands and classics, but not much about fighting applications or weapons. I find it hard to imagine a better text for beginning to intermediate students of Yang Taiji.
Wing Tsun Kuen by Leung Ting
I can't really comment, but this seems like a solid technical training manual for WT beginners.

Kwong Wing Lam's book on moi fah. really good reference.
The Kuo Shu compilation from 1953.
The complete Cha Chuan
The complete Tai Chi styles compilation.
Kung Fu is good for you.

"Shaolin Long Fist Kung Fu" by Yang Jwing-Ming and "Rhythm and Power of Tantui" with Simmone Kuo are two long-time favorites.
