why is it that WC guys kinda just roll their hands around like that? I don't understand trading speed for power...it would take about 300 of those weak punches to knock out a trained fighter...if you could get 5 off. you can balance speed and power and have a quick, explosive striking art.

Well, go to your nearest wing chun school and ask that their teacher give you 10 full power roll punches... I mean, if it would take 300 to knock out a trained fighter, so 10 should just feel like a feather tickling you.
OR, just ask for 3 or 4 punches if you're not a trained fighter
why exactly would I let him get 10 off on me? I wouldn't just stand there with my head rammed in my ass waiting for him to finish his rolling hands. Chances are I'd grab and bounce his face off the mat if he was that close to me.ask that their teacher give you 10 full power roll punches
What I was trying to get at is this:
Who would just stand there and let someone do that to you? I cetainly wouldn't...it seems a little unrealistic to me.

This is a story told by one of my sifu's 2nd form students and later confirmed by a third party (non-WC) witness to one of our other students. You can believe it or not, I won't argue it with you because I wasn't there. I'm just relating the story the way I heard it.
The student (at the time) was one of those on again-off again types who didn't have a lot of time between work and school to take regular lessons, but he was pretty diligent about doing the two forms he had learned. He had barely started the 2nd Form, so I guess you could say he really was a 1st Form student at the time. Anyways, he was playing in a pick-up basketball game at school (University of Calif. San Diego) when a dispute arose. Words exchanged and all that. All of a sudden one of the other players came charging in, apparently intent on tackling our guy. Same old thing, right? Anyways, our boy just reacted, stepped back into a stance ) and let loose his chain punch - two of them, and stopped the guy dead in his tracks. Knocked him out cold. He didn't even get three punches off, although that's what he had intended. Now, we're not talking about an experienced student here - he was a rookie; so I wouldn't say he has a tremendous amount of power. I guess it goes to show that having well developed power is important, but hitting the target is just as important. Incidentally, the 'victim' in this little saga reportedly had about an 50-80 pound weight advantage (depending on who was telling it) as well as a couple inches of reach (they both agreed on this).
Our boy said he really didn't think about it, he simply reacted with the punches, probably because it was one of the few things he was really comfortable with and he couldn't think of anything else to do under the circumstances. He knew if the guy got in on him that it would have been all over. He was downright shocked that a couple punches worked so well, and he called the sifu later that night to tell him "Hey, this stuff really works!!!"
This was a couple years ago and I think he has just barely gotten to 3rd Form - so he's still an on-again, off-again guy. He just started Dental School this last Fall, out of state.
Obviously, the victim wasn't a trained fighter and he did do a dumb thing by just running in without cover. There was no preliminary contact or any defense to counter, he was wide open. A crude attack that warranted a crude response - and it worked.
More than likely if he had tried anything sophisticated he would have just run himself into a wall. I guess it just demonstrates the conservation thing - use what you need and make sure it works the first time. Perhaps it helps to be scared sometimes.

But wouldn't the force of the punches be amplified since the opponent was rushing in full speed?

That's how I would interpret it. I don't imagine he would have gotten off so easily if the guy had put up any kind of defense as he charged in. Even keeping his head down and maybe covering with an arm would have blocked the punches from straight up.
I guess it just go to show that against a really dumb fighter just about everything works.
