My favorite Kenshin series was the Kyoto Arc, where your friend David Lucas was the English dub for Shishio. Good overall series. This arc showcased not only Kenshin's abilities but a plethora of other styles (albeit the moves were fictional for the most part) and interesting villains. It is a series that is definitely watchable again (finding time is another story).

Grappler Baki is a good one. Just fighting and more fighting. I will eventually watch the series Baki the Grappler which is supposed to be based on the main character. Looks cool.

I believe all the things you mention I either watched or own.

The swordplay of Blood the Last Vampire reminds me of both Vampire Hunter D movies.
the fights in cowboy bebop did borrow from bruce lee as its stated in the early eps. that spike was a practicioner of jeet kune do.
